As a nightclub owner I was always interested in maximizing profits. You pay rent for an entire month, but you are only open 2 days of the week, so what do you do with the other 5 nights? In an ideal world you would be open all 7 days of the week but how many people really want to go out on a Sunday night in the middle of winter? Not a lot. How many young adults want to go out at 10 at night on a weekday? Not a lot. Without a kitchen and full food menu you couldn’t compete with restaurants and pubs during the day. So, I offered my club space to anyone that wanted to work together on an off night and we would make it work.

I Should Have Died That Night
I went through a phase. I was sad. Not a "boohoo no one likes me" kind of sad, but a deep, bone-settled kind of melancholy. I was at a small college in San Francisco. A 24-hour plane ride from home with a 15-hour time difference, piled with a huge school workload, NCAA basketball regime and underlying clinical depression; I was not in a good place. Wait, the phase? Drinking to the point of unconsciousness. I look back with dismay but also a good sense of humour.

Ice Wine and Food Pairing Guide
The term "ice wine" is an anglicized form of the German word "eiswein." It is a rich and sweet dessert wine made from the juice of grapes frozen on the vine. Water crystals are still in the juice when it is pressed so the sugar content is higher in these wines. Canada, along the Niagara Peninsula outside of Toronto, is probably the most famous place it is produced. However these sweet, ice wines are also made in Austria, Luxemburg and Oregon on the West Coast of the United States.
