The Bronx Veganism
It's been one year since I became vegan. For a while now, I've been ruminating on what kind of veganism I strive to represent. In a lot of ways, mainstream veganism fails to represent the reality of what this lifestyle looks like for people who live in the Bronx and other communities like it. It is for that reason that I’ve created a structure for my activism, which focuses largely on the consumption aspect of veganism. While food isn’t the only part of veganism, it is a very important element. I hope this outline creates an opportunity for more people like me to take up space in this culture and thrive in it.

Wife Talk: Cheesy Chicken Bake Recipe
Let’s get some back story. I have been cooking and researching most my life—I did learn from my grandmother and mother. Strong women in my life who had large families and hungry teens. This particular recipe my aunt found on Pinterest and I didn’t really like... so I altered it and found this version above works better and is always a hit. Almond Joy Cookies
I love chocolate, I love candy bars, and I love cookies! But, most of all I love easy to make cookies hot out of the oven. I admit that I am really pretty lazy when it comes to baking. I don't get that trait from my mom. I remember her bustling around in her apron mixing and sifting. I am a child of the 50s so a lot of what we take for granted these days in terms of ease of baking simply did not exist as yet.

Healthy Chicken Fried Rice
Hello my little lovelies! So I know I've been lagging a little bit but I promise you posts are coming. As soon as I get into a routine with work and the gym I'll be much better at it, I promise. Things have been a little hectic with work, then trying to fit in the gym and trying to develop a routine so that I'm not constantly crying my eyes out because my husband isn't here to calm me down if I've had a bad day. So with that being said, I'll be posting from now on Mondays and Fridays, still have to establish a time and make sure it coincides with my break at work so I can be consistent with posting times. So just hang on tight!

I was meandering through the kitchen the other day, sulking over the lack of food that was in my fridge and pantries. My stomach growled. What was I going to eat? "Wait," said my brain. A lightbulb was suddenly flickering above my head. There's frozen vegetables left in the freezer, plenty of ramen in the pantry. Maybe, just maybe, that was enough to make something great. Or tolerable. At that point, tolerable would be just fine. I quickly got to work on my plan.

Whipped Pumpkin Pie
I love pumpkin pie. But, whipped pumpkin pie takes a good thing and makes it totally awesome! A friend of mine brought this to Thanksgiving dinner and it was the hit of the party. I was amazed at how easy it was to make... especially using a pre-made graham pie crust.
