Vegan Bites, Sweet Treats for All

Ode to the Amtrak Vegan Burger
I don’t know about you, but Amtrak is one of my favorite ways to travel. Whenever I get the opportunity to travel, it’s the number one service I go to first. I love watching my scenery change from the rush of New York City to the calm and serene of Upstate New York. Traveling long distance by train is most comfortable because of the comfy seating, free accessible bathrooms, and my most favorite feature: the food cart.

Farmers Market
It’s getting close to the end of the season for farmers markets but that doesn’t mean you should stop going. Going to farmers markets can be a fun activity you do every Saturday morning but it could be your way of life from now on. You’re probably wondering what I mean by that, well there are some markets that go on all year round, that’s right y’all farmers markets can go on all year. Now going there and getting fresh veggies, homemade breads, and other baked goods, flowers or even art could be a pass time but for the vender it is their way of life. It can be how they make all their money or just a way to get some extra cash, whatever it is, it’s a way to support the locals in the community. I’m all for supporting small businesses, they give you something that a corporate business doesn’t, passion. I myself have a small farm stand where I sell produce from on Saturday’s and a way of getting some extra cash. What I love most about it is telling my customers how much agriculture and serving the community means to me. We as humans find that if a business is passionate about what they do and who they do it for you dollar goes a lot further with that vegetable stand guy than the big box stores. That should make you feel better about the business you do with your local community, most people out at the farmers market are just trying to get by like the rest of us and if you’re loyal they will cut you a deal, especially if they are passionate. With that next time you are in town in a Saturday morning check to see if there is a farmers market and remember, local always taste better and makes the community happy too.

Top 10 Vegan Chocolate Goodies
As a sweet loving person, Chocolate needs to be on hand for any "I don't want fruit" emergencies. Although I must admit, I'm actually not that much of a "let's eat a Chocolate bar" kind of person. Saying that, when I open the packet it does tend to disappear pretty quickly.

Mocha Chocolate Cake Recipe
Let me just start out by saying how delicious this cake is! It is super moist, not too sweet, but very chocolatey. The mocha in the cake adds no taste, but instead highlights the chocolate flavor, which makes this my favorite chocolate cake of all time. I got this cake recipe from Preppy Kitchen! A Recap of Vegan Panel: Network and Chill
On a beautiful day in NYC, six vegan leaders came together in the back room of VSpot Organic, located on the buzzing street of St. Mark’s Place. Each representing a different organization with different goals, what brought these leaders and the crowd to this Latin vegan restaurant was a commonality of plant-based and/or vegan practices and navigating this culture as people of color. It was an opportunity for everyone involved in these vegan communities to come together once again to uplift, inspire, and find new ways to support.

Also if you are having a go at these cupcakes I recommend you drink it with lemon and ginger tea. This recipe makes 10-12 cupcakes but you can always double the quantity to make even more for those special occasions.
