Gluten Free Summer
When I think of Summer there are so many things that pop into my head. Warm, toasty sunrays hitting fair, freckled skin. The sound of laughter and splashing coming from the pool. Waves gently crashing against the golden sand. The drip of that single drop of perspiration sliding off an ice cold beverage cup. And yes, the scrape, rustle and cheerful chatter of people having their picnics and barbeques. It's such a joyous and bright time of year I don't always think of food right away and yet there it is, inherent in everything. The item all our social gatherings revolve around. An item that in fact many take for granted, but for those of us who are medically gluten free it's not always so easy.

A Burger Guy's Surprise
I’m a burger guy. I love a good cheeseburger. A thick patty of juicy meat cooked medium to medium well, just a thin line of pink in the middle. Add a ripe tomato, some lettuce, some onion, and of course cheese. A good tasting bun, or toast, and, sure, add some sauce or ketchup, mustard and mayo. My mouth is watering just thinking about it! That is why it’s surprising that when I think about what summer tastes like for me, it’s not a burger. In my defense, burgers are all season food. I live in Wisconsin – it’s grilling weather all year long here. Wintertime, just throw on a snow suit, shovel off the grill, and its burger time. So, what evokes the taste of summer for me?????? It’s salad.

Simple Pleasures Food Treasures
I confess, I read about and watch videos about cooking more than I actually cook. However, there are times when I just have to bust out and create something that strikes that nostalgic chord. I was remembering my childhood and thinking of some of the foods my Dad had introduced us to. Other than that one time after a really good afternoon at the pub when he came home and made sandwiches of sardines dressed them with fried eggs, mustard, mayo, ketchup, AND peanut butter, for the most part he was a simple man and loved simple hearty meals. Cornmeal was one of his favorites. Cornmeal, definitely an unsung hero, is a surprisingly versatile food that has been used for hundreds of years as a dietary staple. As we enter times of scarcities and food shortages, and look for inexpensive foods with a long shelf life, this humble commodity can become a shining star at your table.
